Well I love smelling the delicious aroma that comes from a crockpot of foods that has been simmering all day. Here is one of my favorite recipes.



Green Chili Chicken Stew

1 small chicken cut up then salted and peppered

2tbsp olive oil (for browning chicken)

1 large green bell pepper cut into chunks

2 small hot green chili peppers diced

2 tbsp of creamy peanut butter

1 cup chicken stock

1tsp salt

1/2cup buttermilk

1 tbsp flour or 1tsp cornstarch

Heat olive oil in heavy frying pan, then darklybrown chicken each piece chicken on all sides than remove chicken and place in crockpot or stewing pot.

Add green bell peppers, hot green peppers and onion to hot oil in frying pan. Saute for about 3 minutes then stir in peanut butter, coating the peppers and onions then add 1 cup stock, bring to a simmering boil than pour mixture over brown chicken. If you are using a crockpot on low degrees then let pot simmer for at least 3 hours, if you are using just a pot on stove then let it simmer on low degrees for a hour.



After this mixture has simmered it's time out, mix buttermilk with flour and salt than stir into pot and simmer on low degreeand 30 minutes untill gravy is thick.

This dish is great with a crusty bread or over white steamed rice.blktype
