Salmon with Calypso Sauce [/align]

INGREDIENTS
1lb.
(450 grams)
salmon fillet,cut into serving sizes
1/8tsp. salt
1/8tsp.black pepper
1tsp.olive oil
2ozs.(60 grams)margarine
1cup dry wine
1whole scotch bonnet pepper
1/2 packet GRACE COCONUT MILK (POWDER)
3/4 cup warm water
1/2packet GRACE COCK SOUP MIX
METHOD
- Preheat oven to 350°F/ 180°C. Cut salmon into serving sizes (about 4 servings).
- Sprinkle salt and black pepper on the salmon fillets. Rub the olive oil over the salmon. Wrap salmon fillets with aluminum foil.
- Lay on greased baking sheet and place in oven for 25 minutes.
- To make the sauce, melt 1 oz of margarine in a small saucepan over a medium flame. Pour the dry wine in the saucepan, bring to simmer and add scotch bonnet pepper.
- Dissolve Grace Coconut Milk in warm water.
- Stir in Grace Coconut Milk and Cock Soup Mix. Continue stirring the sauce until creamy. Add more Grace Coconut milk for desired thickness.
- Remove from oven, unwrap fillets, and place on a serving plate. Pour Calypso Sauce over salmon fillets.
