i think you are thinking of deep frying...stir frying is just using some olive..or any other healthy oil..and just heating the veggies up a bit..they still keep their freshness in the process...
as far as afrikan focused and healthy...you may just have to experiment and leave the unhealthy things out of the recipe...
i use recipes sometimes but i always put my spin on them..."blacken" them up in a healthy way..
veggies are veggies ...it is how you cook them that makes them ethnic..

i also find myself making soups lately...herbs, veggies, and broth...easy and good...
veggie stews can be made healthy also...
i keep away from the white things like...flour, sugar, bread...i use whole grain products...which makes a world of difference..
oh...and i keep away from processed things also...anything in a box/jar or anything with ingredients that i can not pronounce or has too many syllables...lol..
