My sister has been a vegetarian for about 15 years. When i have cooked for her in the past i have made her things like Cous Cous and Bulgar Wheatwith stuffed red peppers and rice. Just cook your Cous Cous as directed and flavour it as you like. You could also serve up a jacket potato with lentils or the cous cous.
One of my favourite veggie meals is red lentils. You can just cook your lentils in water on the stove and add your ingredientsi usetomato puree, onion etc and then that is a meal done.
One of my favourite things is also tofu in black bean sauce with green peppers. Maybe you could give tofu a try?
Stir frying is not fatty, you can get a oil spray in the supermarkets and that is verylow virtually no fat at all in those.
Also, you could try cooking brown, black eye or red beans. Soak your beans overnight and then cook them on the stove soaking them will help you to reduce the cooking times. Let the beans soften for a while before you add your flavourings and then that is a meal there.You could serve it with rice, yamwithomlette or Yam on its own.
When cooking rice you could try to spruce up your rice at times to add flavour. Make your sauces for food interesting as well as to give the food some flavour.
You could try Macaroni cheese or cauliflower cheese with low fat cheese once in a while.
I tried those fake mince and i didn't likeit but maybe you will. You can try the fake mincewith pastaand make Spaghetti bolognaise
