Kept hearing about this quinoa stuff from gillian mckeith and finally decided to give it a try for the first time this evening. It was lovely!! As someone whohas recently developed awheat/rice intolerance,its an absolute godsend.i think you can buy it in supermarkets but just in case you can't get it, holland and barretts do it.

Anyway, heres my recipe. This is a soulstarr original recipe so if you try it, please let me know what ya think! As i was kinda playing this by ear, I didn't make any measurements so just use your judgement and the preffered amounts to taste.(the ingredients used are in bold)
  • measure outyour quinoa and then add twice the amount of water to a saucepan
  • rince quinoa thoroughly as you would with rice and set aside
  • add some chopped red onion, mushroom, chopped cashew nuts and a heaped teaspoon of vegetable bouillion to the water in the saucepan and bring it all to the boil.
  • Once its boiling, add the rinsed quinoa and a handful of rasins or currants and turn down toa moderate heat.
  • cook for around 15-20 at which point the quinoa grains open up and a little white root-like thing is revealed. all of the water should have been absorbed.
And you're done! It should have the same kind of texture as rice when cooked

I served it with miso glazed salmon fillets(and i forgot the damnsliced avocado with olive oil and lemon lol)but obviously theres a million different things you could serve it with. I was planning on mixing prawns in next time or maybe some grilled chicken peices. i probably would have added sweetcorn but hubby can't stand it some had to leave it out unfortunately

Next time I make it, I'll work out measurements and post them up, that should make it a little easier to follow this recipe.

P:S- I think this is probablygood for vegetarians as its predominantly protein.
