Sis sorry for the delay in replying I'm still on a pass thru at the moment but to answer your question. I had the same problem as you when I tried with the potted plants from the stores but noticed since growing my own that Corriander has ALOT of roots.
Think of it like "as above so below" so if there are loads of branches on top the chances are that ther are loads of roots at the bottom. The same I found with tomatoes.
So when you do get a pot from the shop, transfer the plant into another larger pot and add more soil around the roots. That should give it a much better base for the roots to spread out and more room for the water to seep in and get to them. You see how the supermarkets stay and keep you coming back to buy more!!
