Cooked this for dinner yesterday. I know what you mean about flavours sinking in. The same applies to most fish and I find that the guaranteed way to make sure you taste the seasoning all over and in the flesh of the fish is to season the day before and leave overnight. You can also season up and freeze the fish in food bags to use whenever you need it.
Seasoning I used yesterday; Garlic 1 clove crushed, a small handful of fresh chopped corriander, all purpose seasoning, at least the juice of 1/2 lemon.
It's quite an oily fish but I fried it. Sometimes I cook it down adding the seasoning and plus a top up of onions, tomatoes and peppers. I prefer to grill it but need all the fat I can get so hey what I can get from it fried all helps
