You could start off selling to friends and family.... this could help in terms of initial research and development. Let them know that your looking to turn it into an income/business in the long term, that should take the sting out of the expectation of payment.
Once you have a recipe that you feel is ready, I'd suggestone golden ruleNEVER to be broken. ANYONE that takes the the product pays for it, including yourself. If you have to pay for the product yourself, it helps you to maintain the disipline of charging for it.
I've seen many black businesses fail for no other reason than every man jack whose knows your second cousin's best friends unclefrom down the road, expects a free handout the minute you have a business. The time for any generosity is after the money is rolling in, not before.
