If its a Salmon cutlet either lightly grill or shallow fry, dont over cook it because it can be very dry.Serve it with a squeeze of lemon.
Alternatively poach it in a prepared mix of onions carrots parsley and vinigar in lightly boiling water.....leat it hot or leave it in the water to cool and eat it cold a day later.

My favourite way would be to poach as I said and eat cold with a salad.
But yes..... BP ...washed, a brushing of oil, season with salt and pepper and simply grilled turning often so the juices remain in the cooking fish and not leak into the grill pan.
Salmon doesn't really need all that seasoning.....of course its all a matter of personal taste

Here's a quick and easy way that I cook Salmon:
Clean it of course using cold water.
Put the Salmon in a ziplock bag and pour in some soy sauce. Pour enough to coat the fish. Let it marinate for at least 30 minutes up to 24 hours.
Preheat oven to 350 degrees. Make sure that you Salmon is room temperature before putting it into the oven.
Before you put the Salmon into the oven season to taste with kosher salt and pepper.
Bake for 12 - 15 minutes or until fork tender.
This also works well grilled.
Here is another easy recipe:
Season the Salmon with your favorite seasoning. ( I use kosher salt and pepper)
Use a shallow frying pan.
Coat the bottom of the pan with olive oil. You'll want to use enough oil so that the pan doesn't dry out during cooking.
Using medium heat put the fish into the oil skin side down. Cook until the skin is crispy. (If the oil seems to be getting to hot turn the heat down some)
Turn and cook the fish untilthe flesh side is flaky.
Remove from oil and place the fish onto a paper towel to drain excess oil.
Plate it up.

The best way ive found to cook salmon fillets is to season them, then steam them in a steamer. They stay succulent this way and dont dry out or get saturated with oil.

I love to cook salmon up in the oven in a spicy tomato sauce. I gave this recipe to my friend to romance his girl for valentine's day and received nuthin but praise. Just season the salmon as normal, and cook in a dish covered by tinned tomatoes, tomato puree, salt and black pepper, hot pepper sauce (to ur taste) and herbs like thyme, oregano etc etc.
hope this works for u

Salmon is my favourite fish!!
Oildowndown salmon, best with salmon steaks or fillets.
I season the salmon with a little all purpose, black pepper, and garlic (try not to use too much seasoning, just light sprinkes). Grill the salmon turning it halfway, and making a separate sauce of 1 can of coconut milk, onions, tomatoes, sweet peppers, and whole okras (if you like them). Season the sauce with a little more black pepper, and all purpose,(hot pepper if you wish) and let it bubble for 5 mins, stir occassionally).
When salmon is grilled add pieces to sauce and let simmer for a further 5 mins.
Nice serve with pilau rice, if you cant make it buy the microwable one from Sainbury's....have to say it does taste wicked!!!

I love salmon as well, and have enjoyed it by simply marinating salmon steak in the following ingredients for 30 minutes and grilling: a sprinkle of coarse Salt, pinch of chilli powder or cayenne pepper, Black pepper, a bit of white wine, garlic, chopped spring onion or chives, olive oil and fresh coriandar . Then wrap in kitchen foil and put in the oven until done to satifaction. Finallyserve with a green salad.

Wild salmon is the best. Does not require too much seasoning as it already has a nice tangy flavour.
Sprinkle some black pepper, coarse salt with seaweed and squeeze over some lemon juice and a bit of olive oil. Wrap in some kitchen foil, bake for about 30 mins. Serve with boiled new potatoes, asparagus spears and hollandaise sauce, which you can get ready made.

Cooked this for dinner yesterday. I know what you mean about flavours sinking in. The same applies to most fish and I find that the guaranteed way to make sure you taste the seasoning all over and in the flesh of the fish is to season the day before and leave overnight. You can also season up and freeze the fish in food bags to use whenever you need it.
Seasoning I used yesterday; Garlic 1 clove crushed, a small handful of fresh chopped corriander, all purpose seasoning, at least the juice of 1/2 lemon.
It's quite an oily fish but I fried it. Sometimes I cook it down adding the seasoning and plus a top up of onions, tomatoes and peppers. I prefer to grill it but need all the fat I can get so hey what I can get from it fried all helps
