need some healthy snack and meal recipes

there is one dish my friends mum does which is

per person 2 hard boiled eggs, salad, mash potatoes, and maybe a oven baked turkey drummer or something similar

How about a small jacket potato with low cal spread with chicken/turkey slices or turkey/chicken breast, prawns and crabsticks. Prawns and Crabsticks are really low cal crabsticks are about 10 cal per stick. You could add some salad in their as well like a bit of red pepper and salad onion for flavour etc. You could also use extra light Mayo and serve it up with a big portion of salad and a bit of black pepper if desired.

You could also maybe roast a red pepper and stuff one with some fillings. A whole roast pepper is like 50 calories for one.

You could also grill a small fish and serve that up with salad.

How about this

Ingredients

1 or 2 pieces of sliced mackarel with crushed pepper

2 medium sized potatoes

1 medium sized tomato

2" think piece of cucumber

1/4 or 1/2 onion

1 tbsp mayonnaise

salt, pepper, mixed herbs to taste

Method

Squeeze some fresh lemon on the mackarel before it goes under the grill and grill both sides. Grill the skin side first otherwise the fish will curl and it gets a little tricky to turnand will reallyburn your *blousebeet* fingers:X

Peel and medium dice some potatoes. Boiluntilthey are firm but just before they break when you test them.

Drain the potatoes, chop up1/4 to 1/2an onionand add this to the potatoes. Then put a dollop of mayonnaise into this and mix it up. Add salt, pepper and mixed herbs until you are happy with the taste. This is potatoe salad by the way lol.

Chop up some cucumber and tomatoes into small cubes, mix them up into a salad squeeze lemon and salt lightly if necessary.

All should be finished within 20 minutes and you should get a good snack out of it.

These are my all-time favorite snacks, and all but the sauceless pizza have practically no carbs, if that's what you're watching.

Ants on a log:
-Peanut butter spread on celery sticks, top with raisins.

variation: laughing cow cheese spread on celery sticks.

Eggplant pizza:
-thinly sliced eggplants lightly oiled on both sides.
-put in oven 4 min. on each side
-take out, top with sauce, cheese (any other toppings) and put in oven again until cheese is melted.

Sauceless Pizza:
Ingredients-
-Boboli pizza crust
-1 tomato
-half-cup frozen spinach
-low-fat feta cheese
-low-fat mozzarella cheese
-two cloves of garlic

1) Lightly oil pizza crust
2) cover crust with thinly sliced tomato
3) Salt and pepper the tomatoes
4) spread spinach over tomatoes
5) spread about 1/4 cup feta over spinach
6) spread 1 clove of garlic, diced, over feta
7) cover with mozzarella
8) sprinkle some more feta and the other garlic clove to finish.

Follow cooking directions on the pizza crust package.
