I have not heard of Plantain and bean soup.. Where does it originate from?

might have been beans + plantains + sauce... i had it a while ago at the blackhistory month festival, think its from kenya

Smile Ewa... Nigerian bean dish - 14-01-08, 08:42 PM

I know of a Nigerian bean dish called EWA. Dependant on the cook, it can appear almost like a soup... It's often served with fried plantain as well.

Dark red Black eyed beans (contain the most flavour)

sweet corn

onions/tomatoes/red pepper/scotch bonnet/maggie cube

Veg oil or palm oil (use to fry onion etc blend)

cray fish or fried fish peices

Dry hot pepper dependant on your tolerance to pepper

---------------Basic method----------
1) Boil beans in water (water should cover the beans to a decent degree) boil until soft. Leave the remainder bean water (compliments taste and consistency of dish, as some pple drain it away and it is too dry and horrid in final dish)

2) Blend onions etc to smooth paste. Add these contents to a pot of hot oil, this fries the stew mixture. Let this cook for a while and then add the boiled beans with its water. Mix together with a large spoon and let this cook out for a little while, then...

3) Add the sweet corn/ cray fish or fried fish pieces to the beans and stew mixture, mix them all in carefully as the beans have a tendancy to break up. Taste and add seasoning/pepper to suite you.

Leave to cook out some more... Dish should be ready for serving after you....
