BBC, no one knows them as "collard" greens here and I can't find mustard greens to save my life. Being that no one in my family eats pork, we make it with smoked turkey neck, not ham hock.
I was describing chitterlings to the Brits at work, which was highly amusing consideringScottish "haggis" is damn near.
Good thing I have family all over the place... I get to hop countries and sample.
My favorite dish has to be jerk chicken with rice and peas hands down! After that, pumpkin soup...

I'd definitely have to go with lambi (aka conch to almost everyone else) boiled or bbq version, and curry goat.
Both go so well with dumplings....St. Lucian style (not same as Jamaican dumplings....these are small pieces of rolled dough boiled in a pot of sauce (peas, beans, seasonings), with some cut up potatoes to make the sauce thick....my stomach is rumbling and my mouth is watering at the thought). It tastes esp well with lambi, in my opinion, but you can pretty much add any kind of meat that you want.

My absolute favorite dishesare from Haiti:
Legume -- a thick stewof beef,lima beans, cabbage, and carrots ( stews were 'ho-hum' to me until I tasted this one)
Griot -- fried chunks of marinated pork
Tassot -- fried chunks of marinated beef
Riz Djon Djon (sp?) -- ricetinted and flavored with indigenous (dried) black mushrooms
I also love a good Jamaican jerk porkw/ rice & peas and sweet fried plantain, andGuyanese roti and phoulorie.
The only foods I still occasionally have a craving for from my own (southern US) heritage are fried chicken, BBQ spare ribs, baked macaroni & cheese (NOT the boxed stuff),andsweet potato pie.

Usually, African-Americans mix turnip & mustard greens to cook together from where I grew up, and kale and collards were usually prepared on their own.
